Ingredients

  • 2 medium onions, quartered
  • 3 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 large leek, chopped (optional)
  • 1 medium potato, peeled and chopped (optional, for extra richness)
  • 2 bay leaves
  • 1 tbsp whole black peppercorns
  • Fresh herbs: parsley stems, thyme, rosemary (optional)
  • 1 tsp turmeric (for color and flavor, optional)
  • 6 cups cold water

Cooking Steps

    Combine all the vegetables (onions, carrots, celery, garlic, leek, and potato), bay leaves, peppercorns, fresh herbs, and turmeric in a large pot.

    Add 6 cups of cold water, or enough to cover the vegetables by 1-2 inches.

    Bring to a boil, then reduce the heat to low and let the broth simmer for about 45 minutes to 1 hour. The longer it simmers, the more flavor you get.

    Skim any foam that rises to the top during the first 20 minutes of simmering.

    Once the vegetables have softened and the broth is rich in color and flavor, strain the broth using a fine mesh strainer or cheesecloth to remove the solids.
