Cooking Steps
- 1Combine all the vegetables (onions, carrots, celery, garlic, leek, and potato), bay leaves, peppercorns, fresh herbs, and turmeric in a large pot.
- 2Add 6 cups of cold water, or enough to cover the vegetables by 1-2 inches.
- 3Bring to a boil, then reduce the heat to low and let the broth simmer for about 45 minutes to 1 hour. The longer it simmers, the more flavor you get.
- 4Skim any foam that rises to the top during the first 20 minutes of simmering.
- 5Once the vegetables have softened and the broth is rich in color and flavor, strain the broth using a fine mesh strainer or cheesecloth to remove the solids.
- 6Cool and store the broth in containers, or freeze for later use.
