Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup snap peas
  • 1 onion (sliced)
  • 2 garlic cloves (minced)
  • 1 tbsp low-sodium soy sauce or coconut aminos
  • 1 tsp ginger (grated)
  • 1/2 tsp black pepper

Cooking Steps

    Heat olive oil in a wok or large skillet over medium-high heat.

    Add shrimp and cook for 2-3 minutes until pink and cooked through. Remove and set aside.

    In the same pan, add garlic, ginger, and onion, sautéing for 1-2 minutes.

    Add bell pepper, zucchini, and snap peas, stir-frying for another 4-5 minutes.
