  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 1/2 tsp black pepper

Cooking Steps
