Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped

  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (optional for extra heat)
  • 4 cups low-sodium vegetable broth
  • 1 tbsp olive oil
